Almond Chocolate Chip Cookies

This is for the PHILLIES!! Quite possibly one of the best things I make for sure, and most frequent at that. This picture is from my cell phone and doesn't do it justice therefore I won't make a proper post about it, but I will confirm that the center cookies have vegan candy coated chocolates (one of the many awesome things I can get at my favorite kosher grocery store...Post about that soon!) These are my almond chocolate chip cookies which are like an Italian version of the classic, with super almond flavor in the cookie and sliced almonds throughout the cookie with my favorite semi-sweet chocolate chips. I slightly underbaked them (11 minutes on 350) causing them to have crispy outsides and semi-gooey insides and melty chocolate. It was suggested and then verified that a scoop of Coconut Purely Decadent Chocolate Peanut Butter Swirl was a good idea to put in the middle of two cookies, making one of the best ice cream sandwiches in existance. (Warm gooey cookies surrounding melty coconut-based chocolate ice cream!) I had the same but with Chocolate Almond Brownie something or other..wowzas. I will also add that these have a higher fiber content than your average cookie, with a substantial amount of flax seed and a good amount of whole wheat pastry flour.

Introductory Post
I started this blog because I am a complete head case and would love to start keeping track all of the delicious vegan food that I create. I am really good at making something amazing, and then forgetting about the dish or the recipe a week later. I am putting an end to that. I would also like to utilize this blog as a sort of friendly reminder of how healthy eating and veganism go hand-in-hand. And what a great way to promote veganism, by showcasing yummy food and treats? (Heavy on the treats, trust me!)
That is all I have for my first post, look forward to my next post of apple cider donuts, a wonderful seasonal treat!
